
Rooibos Chai Tea Made with fresh ginger

I love this chai tea recipe because it just has so much life compared to the dried herb, packaged chai. It's warming and great for digestion. I find it super satisfying for when I'm having a sugar craving. Unlike regular chai tea which is made with black tea, this uses a caffeine free red tea. I like to make a large pot of it on the stove and share with friends on a chili afternoon.
10 cups of filtered water
4 bags of plain, organic rooibos tea
2 inch piece of fresh, peeled ginger, smashed and chopped roughly
5 green cardamon pods, bruised
2 cups of full fat Oatly or a can of coconut cream
Honey to taste, OPTIONAL
Bring the water to a boil in a pot on the stove. Add the tea bags, ginger, and cardamon pods. Cover and reduce heat to low. Turn off heat and add the milk and honey. I like to scoop out some and put it in the blender to make it frothy. I strain it out into my cup to collect the fibers of the ginger and pods.
